Original recipe:
Ingredients
- 75 grams butter (melted)
- 250 grams self-raising flour
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- 1 pinch of salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 115 grams caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon honey
- 2 large bananas (ripe)
- 2 medium eggs
- 125 ml milk
Method
- Preheat oven to 190c
- Leave melted butter to cool
- Mash the banans well
- Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg into a bowl. Add the sugar and mix well. In a second bowl, with a folk, beat together the eggs, vanilla extract, honey, butter and milk.
- Add the bananas to the egg mixture and stir.
- Make a well in the dry mixture and add the egg mixture. Stir roughly with a folk. (Don't stir too much - its meant to be thick and lumpy!)
- Grease a muffin/cake tin well and fill each space with the mixture. P
- ut in the over for 20-25 minutes.
- Once golden brown and firm remove from oven leave to cool for 5 minutes in the tin and then 5 minutes on a wire rack. Mmmmmm yummmy!
Bahan-bahan:
75 g mentega – dicairkan
250 g tepung naik sendiri + tepung paling halus (superfine)
1 sudu teh serbuk penaik
1/2 sudu teh soda bikarbonat
Secubit garam
1 sudu teh serbuk mixed spice (dalam botol)
115 g gula kastor
1 sudu teh esen pisang
1 sudu teh madu
5 biji pisang emas – dilecek halus
2 biji telur
125 ml susu segar
Cara-cara:
- Panaskan oven pada suhu 190°C.
- Biarkan mentega sejuk (suhu bilik).
- Ayak tepung, serbuk penaik, soda bikarbonat, garam dan mixed spice. Kemudian, masukkan gula kastor dan gaul rata.
- Di dalam mangkuk berasingan, pukul telur, esen pisang, susu, madu dan mentega dengan garpu.
- Kemudian, masukkan pisang dan kacau rata.
- Buatkan lubang di bahagian tengah tepung dan tuangkan adunan pisang. Gaul rata dengan garpu, jangan gaul terlalu kuat kerana adunan muffin sepatutnya berketul-ketul.
- Sediakan cupcake jenis keras, tuangkan adunan 3/4 penuh dan susun di dalam dulang muffin/biasa.
- Bakar selama 20 – 25 minit (Mrs K tambah 10 minit lagi sebab kek belum masak), hingga kuning keemasan. Setelah masak, keluarkan dan biarkan di dalam dulang selama 5 minit sebelum dikeluarkan dan sejukkan di atas redai.
- Sedia dihidangkan.
