Menu 14.9.2017

Assalammualaikum,

Jom tengok resipi.


BREAKFAST

Cucur Udang


Bahan-bahan:

1 biji bawang Holland – dipotong dadu
1 biji cili merah – dicincang kasar
Segenggam udang yang dikupas – dicincang kasar
Secekak daun kucai – dipotong 3 cm panjang
2 cawan tepung gandum
1/4 sudu kecil serbuk kunyit
Maggi Cukup Rasa secukupnya
Air secukupnya
Minyak untuk menggoreng

Cara-cara:

  1. Bancuh kesemua bahan kecuali minyak hingga mesra. Rehatkan 1/2 jam.
  2. Panaskan minyak (agak banyak). Jemput adunan menggunakan jari dan masukkan ke dalam kuali.
  3. Goreng hingga kekuning-kuningan. Angkat, toskan minyaknya dan hidangkan bersama sos cili.



LUNCH

Asam Rebus + Singgang Ikan Bawal Emas


Bahan-bahan:

1 ekor ikan bawal emas sederhana – dipotong 3
5 biji bendi
1 batang serai – diketuk
1 kuntum bunga kantan – dibelah 2
2 tangkai daun kesum – ambil daun sahaja
Air secukupnya
Garam secukup rasa
2 keping asam gelugur

Bahan-bahan ditumbuk:

3 biji bawang merah
1 ulas bawang putih
1 biji buah keras
1/2 inci lengkuas
1/2 inci kunyit hidup
1 biji cili merah

Cara-cara:

  1. Masukkan lebih kurang 1 1/2 cawan air, asam gelugur, serai, bunga kantan, daun kesum dan bahan tumbuk ke dalam periuk. Didihkan.
  2. Masukkan ikan dan bendi. Kacau perlahan, masukkan garam. Setelah mendidih dan ikan masak, rasa, jika ok, tutup api.

Ayam bakar mayonis – untuk bekal ke office, makan dengan 1/2 cawan beras perang dan salad. Try to eat more clean food.

Ayam Bakar Mayonis

Bahan-bahan:

2 ketul ayam
1 1/2 sudu besar Greek Yogurt Plain Nestle
1 sudu kecil serbuk lada hitam Ajinomoto
Sedikit butter

Cara-cara:

  1. Perap ayam dengan kesemua bahan kecuali butter semalaman dalam fridge.
  2. Panaskan butter dalam non-stick pan dan pan-grill ayam hingga masak,






Kari Ikan Talang Masin


Bahan-bahan:

1/2 ekor ikan talang masin – direndam 1/2 jam, dibasuh, ditoskan
1/2 biji nanas madu – dikupas, dibuang bahagian hitam, dipotong kecil
1/2 kotak santan
1 peket serbuk kari ikan
2 tangkai daun kari
1 sudu kecil halba campur
1 sudu kecil pes asam jawa
3 biji bawang merah – dihiris
2 ulas bawang putih – dihiris
1 hirisan halia – dihiris halus
Air secukupnya
Kalau kurang masin, boleh tambah garam secukup rasa
4 sudu besar minyak

Cara-cara:

  1. Panaskan minyak di dalam periuk. Sementara itu, bancuh serbuk kari, daun kari dan air secukupnya untuk dijadikan pes. Ketepikan.
  2. Tumis halba campur sebentar, kemudian masukkan bawang merah, bawang putih dan halia. Kacau hingga nampak layu dan sedikit garing.
  3. Masukkan pes kari dan tumis lagi hingga terbit minyak.
  4. Masukkan air dan santan. Kacau hingga berwap, masukkan nanas dan pes asam jawa.
  5. Setelah mendidih, masukkan ikan masin dan kacau perlahan hingga mendidih.
  6. Rasa, jika ok, tutup api.

Chicken Curry

Ingredients:
12 pieces of chicken parts
1 potato – peeled and wedged
2 sprigs curry leaves
1 cinnamon stick
1 star anise
3 cloves
2 cardamom seeds
4 peeled shallots – sliced thinly
3 peeled garlics - sliced thinly
1 inch peeled ginger – sliced matchsticks
1 small packet meat curry powder (Baba's)
Some water
1 tablespoon coconut paste (kerisik)
1/2 small box coconut milk (Kara)
4 tablespoons cooking oil
Salt and Maggi Cukup Rasa to taste

Method:

  1. Heat oil in a pot (low heat). Meanwhile, mix curry powder with kerisik, curry leaves and water.
  2. Saute cinnamon stick, star anise, cloves and cardamom seeds till fragrant. Then saute shallots, garlics and ginger till brown.
  3. Pour in the curry mixtures and stir until fragrant and oily.
  4. Put chickens and potatoes and stir well. Cover and stir occasionally until chicken's water drained.
  5. Pour 1 cup of water and coconut milk. Stir well and cover to soften the potatoes.
  6. When boiled, stir in some salt and MCR to taste. Stir well and when it boils again, turn off the heat.


Chicken Soup

Ingredients:
6 pieces of chicken parts
1 peeled potato – wedged

4 peeled shallots – sliced thinly
3 peeled garlics - sliced thinly
1 inch peeled ginger – crushed
1 packet Sup Bunjut
1/2 peeled carrot – sliced thickly
2 tablespoons cooking oil
Salt and Maggi Cukup Rasa to taste

Method:

  1. Heat oil in a pot (low heat). Saute shallots, garlic and ginger till fragrant. Pour 2 cups of water and throw in Sup Bunjut. Let it simmer.
  2. Put chickens, potatoes and carrots. Cover and let it simmer to soften.
  3. Put some salt and MCR to taste. After it boils again, turn off the heat.


Sambal Tempoyak

Ingredients:
5 bird's eye chillies
1 red chilli
4 tablespoons tempoyak (durian paste)
Salt to taste

Method:
  1. Pound chillies and salt finely.
  2. Stir in tempoyak. Mix well.
  3. Ready to serve.

I've been planning to make Cheesekut since last year I think but I just can't make myself to do it. Even though the recipe itself doesn't require many ingredients and the methods are easy, but I just can't. I bought the cream cheese a few months ago when there was a sale, but I guess the laziness is above all.

Then last month, out of nowhere, I brought out the cream cheese and whipping cream from the fridge. Half an hour later, I finished made it and put it in the fridge to be hardened.

Let's go to the recipe. I can't really remember where I got the original recipe but I did modify some.


Cheesekut My Version





Ingredients:
1 tube Tatura Cream Cheese – softened at room temperature
1 small box Emborg Whipping Cream
1/2 cup condensed milk
30 pieces (more or less) Wheetameal biscuits
2 sachets Nestum 3-in-1

Other:
1 piece 8 x 8 inches aluminium casing

Method:

  1. Put cream cheese, whipping cream and condensed milk into mixing bowl.
  2. Mix well until combined and fluffy. Stop the mixer.
  3. Layer biscuits nicely and fitly in the casing.
  4. Spoon some of the cheese mixtures and layer evenly on top of the biscuits. Pour some Nestum mixtures evenly.
  5. Arrange some more biscuits and cheese mixtures plus Nestum and repeat until full.
  6. Store in the fridge to harden about 3 – 4 hours.
  7. Cut into squares and ready to serve.

Dinner 15.8.2017

Bubur Nasi Ikan Dory

Bahan-bahan:

1 cawan beras – dibasuh bersih
2 inci halia – dihiris halus seperti mancis
1/2 biji bawang besar – dipotong dadu
1/2 biji kentang – dipotong dadu kecil
1/4 batang lobak merah – dipotong dadu kecil
1 batang akar ketumbar – dibasuh bersih
1/2 keping ikan dory frozen – dipotong kiub kecil
Garam dan MCR secukup rasa
Beberapa titis minyak bijan
Ikan bilis goreng
Hirisan daun ketumbar

Cara-cara:

  1. Masukkan beras ke dalam non-stick pot (jenis tinggi). Tambahkan 4 cawan air. Didihkan di atas api sederhana dan bertutup (jaga – supaya tidak meruap sangat). Masak sehingga nasi menjadi halus (tambah air lagi jika perlu). Perlahankan api.
  2. Tambahkan halia, kentang, lobak merah, akar ketumbar dan bawang. Masak lagi hingga kentang dan lobak merah empuk.
  3. Masukkan ikan dory, minyak bijan, garam dan MCR. Kacau rata. Bubur sepatutnya halus dan tidak berketul (runny). Jika berketul boleh tambah air lagi dan adjust rasa. Tutup api.
  4. Sendukkan ke dalam mangkuk, taburkan ikan bilis goreng dan daun ketumbar sebelum dihidangkan.
  5. Baki yang tidak habis boleh dibekukan.
