Homemade Burger Buns

Directions

  1. In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C).
  2. In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
  3. Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes.
  4. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown.
  5. For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

Bahan-bahan (12 biji):

1 cawan susu segar
1/2 cawan air
1/4 cawan mentega
4 1/2 cawan tepung superfine (atau lebih)
1 paket (11 g) yis segera
2 sudu besar gula pasir
1 1/2 sudu teh garam
1 biji telur
Golden flaxseed untuk hiasan (atau boleh guna bijan)
Sedikit susu segar (untuk brush roti)

Cara-cara:

  1. Panaskan susu segar, air dan mentega hingga agak suam. Ketepikan.
  2. Di dalam bekas yang besar, satukan 1 3/4 cawan tepung, yis, gula dan garam. Gaul rata.
  3. Tuangkan susu suam dan gaul sedikit, kemudian masukkan telur. Gaul rata, masukkan 1/2 cawan tepung, kemudian uli dan masukkan lagi 1/2 cawan tepung sambil terus menguli. Jika boleh, setelah doh terbentuk, alihkan ke atas permukaan yang rata yang telah ditabur sedikit tepung dan teruskan menguli (sambil menambah sedikit tepung jika perlu) hingga mendapat doh yang elastik dan lembut (lebih kurang 8 minit masa menguli).
  4. Bahagikan doh kepada 12 biji doh sama besar. Ambil sebiji dan bentuk-bentukkan hingga menjadi bebola. Susun di atas baking sheet yang telah digris.
  5. Leperkan sedikit, tutup doh dengan kain yang bersih dan biarkan doh naik, lebih kurang 30 – 35 minit. Kemudian, sapukan permukaan roti dengan susu segar dan taburkan flax seed.
  6. Panaskan oven, bakar roti pada suhu 200°C selama 10 – 12 minit.
  7. Sedia untuk dihidangkan dengan daging burger dan salad.
