Chicken Curry
Ingredients:
12 pieces of chicken parts
1 potato – peeled and wedged
2 sprigs curry leaves
1 cinnamon stick
1 star anise
3 cloves
2 cardamom seeds
4 peeled shallots – sliced thinly
3 peeled garlics - sliced thinly
1 inch peeled ginger – sliced matchsticks
1 small packet meat curry powder (Baba's)
Some water
1 tablespoon coconut paste (kerisik)
1/2 small box coconut milk (Kara)
4 tablespoons cooking oil
Salt and Maggi Cukup Rasa to taste
Method:
- Heat oil in a pot (low heat). Meanwhile, mix curry powder with kerisik, curry leaves and water.
- Saute cinnamon stick, star anise, cloves and cardamom seeds till fragrant. Then saute shallots, garlics and ginger till brown.
- Pour in the curry mixtures and stir until fragrant and oily.
- Put chickens and potatoes and stir well. Cover and stir occasionally until chicken's water drained.
- Pour 1 cup of water and coconut milk. Stir well and cover to soften the potatoes.
- When boiled, stir in some salt and MCR to taste. Stir well and when it boils again, turn off the heat.
Chicken Soup
Ingredients:
6 pieces of chicken parts
1 peeled potato – wedged
4 peeled shallots – sliced thinly
3 peeled garlics - sliced thinly
1 inch peeled ginger – crushed
1 packet Sup Bunjut
1/2 peeled carrot – sliced thickly
2 tablespoons cooking oil
Salt and Maggi Cukup Rasa to taste
Method:
1 inch peeled ginger – crushed
1 packet Sup Bunjut
1/2 peeled carrot – sliced thickly
2 tablespoons cooking oil
Salt and Maggi Cukup Rasa to taste
Method:
- Heat oil in a pot (low heat). Saute shallots, garlic and ginger till fragrant. Pour 2 cups of water and throw in Sup Bunjut. Let it simmer.
- Put chickens, potatoes and carrots. Cover and let it simmer to soften.
- Put some salt and MCR to taste. After it boils again, turn off the heat.
Sambal Tempoyak
Ingredients:
5 bird's eye chillies
1 red chilli
4 tablespoons tempoyak (durian paste)
Salt to taste
Method:
- Pound chillies and salt finely.
- Stir in tempoyak. Mix well.
- Ready to serve.
