Menu dinner 1/5/12







Ketam Masam Manis

3 ekor ketam - dibelah dua
1 sudu kecil serbuk kunyit
garam

Gaulkan kesemua bahan dan goreng sederhana garing. Angkat dan toskan minyak. Ketepikan.

Bahan-bahan sos masam manis:

3 ulas bawang putih - dicincang
1/2 biji bawang kuning - dihiris kasar
2 sudu besar sos cili Thai
1 sudu besar sos tiram
3 sudu besar cili + bawang kisar
1 inci halia - ditumbuk halus
2 potong nanas - dipotong kecil
1 pokok daun ketumbar - dihiris kasar
Minyak untuk menumis

Panaskan minyak dan tumis bawang putih hingga wangi.
Masukkan cili kisar dan halia dan tumis sebentar.
Masukkan sos cili Thai dan sos tiram. Tumis sebentar. Masukkan sedikit air jika suka berkuah.
Masukkan ketam, daun ketumbar, nanas dan bawang kuning. Balik-balikkan. Angkat dan hidangkan.



Rendang Kerang

1/2 kg kerang besar

Bersihkan kerang dan direbus hingga masak. Kupas kulitnya dan asingkan isi. Ketepikan.

Bahan-bahan kisar

10 tangkai cili kering - dibuang biji
2 ulas bawang putih
1 biji bawang besar
1 inci halia
1 batang serai
1/2 inci kunyit

1 helai daun kunyit - dihiris halus
1 keping asam gelugur
1/2 kotak santan pekat

Masukkan kesemua bahan ke dalam kuali dan masak kerang hingga agak kering tapi masih berkuah.



Angel Hair Tomyam Ayam


1/2 paket angel hair - direbus ikut arahan pada paket, ketepikan
4 ulas bawang putih -  dicincang
1/2 biji bawang kuning - dihiris nipis
5 batang asparagus - dipotong panjang
1 sudu besar pes tomyam
1/4 paket ayam cincang
Minyak


Panaskan minyak dan tumis bawang putih dan bawang kuning hingga layu.
Masukkan pes tomyam dan tumis sebentar.
Masukkan ayam cincang dan biarkan masak.
Masukkan asparagus dan kacau sebentar.
Masukkan angel hair dan gaul rata.

Peri-peri spaghetti

The other day, I was revising a spaghetti recipe. I thought of cooking olio aglio but then I didn't have enough ingredients and I found a bottle of Nando's Peri-Peri Sauce, so I thought why not trying something new. And the result was, awesome. I brought the left over (small portion only) to the office the next day, and my colleagues who tried it said it was delicious and they asked me to make some more.

Peri-peri Spaghetti (for two persons)



1/2 packet angel hair/vermicelli pasta - cooked as per instructions, set aside
10 dried chillies - cut and soaked in water
5 garlic - chopped
1/2 yellow onion - sliced thinly
1/4 bottle Nando's peri-peri sauce
1/2 green capsicum - sliced thinly
1/4 broccoli - sliced thinly
7 button mushrooms in bottle - sliced thinly
10 shelled prawns
some chicken slices
olive oil
1/4 tsp Maggi Cukup Rasa

Heat olive oil in a wok. Saute dried chillies for a while then set aside.
Using the same oil, saute garlic and yellow onion till fragrant.
Add in mushrooms and chicken slices, then fry till chicken cooked. Add in capsicum and broccoli. Fry a while.
Add in cooked pasta, prawns, Maggi Cukup Rasa, dried chillies and peri-peri sauce. Stir well until prawns are cooked.
Serve hot.
